Derived its name from the Welsh language, bara meaning bread and brith translating as speckled.

Ingredients

  • 375g mixed dried fruit
  • 250g of light muscovado sugar
  • 300ml strong hot tea, strained
  • butter for greasing, or a tin liner
  • 300g of SR flour
  • 1 egg, beaten
  • 1kg loaf tin

Method

  1. Combine the dried fruit, sugar and hot tea in a large bowl. Stir the mixture, then cover and to steep for at least 8 hour ( or overnight).
  2. Lightly butter the bottom of the loaf tin. Stir the flour and egg into the dried mixture, mixing thoroughly. Turn the mixture into the loaf tin and level the surface.
  3. bake in a preheated oven at 150C (300F, Gas 2) for 1 ½ – 1 ¾ hours until well risen and firm to the touch. A fine skewer inserted into the middle should come out clean.
  4. Leave to cool in the tin for about 10 minutes, then turn out on to a wire rack, and peel off the lining paper. Leave to cool completely. Serve sliced with butter if wished.
